Welsh Cakes -Recipe


1 ½ Cups of Flour 

½    Cup of Sugar

¾ tsp salt/baking powder 

¼ tsp baking soda

¼ cup of lard 

¼ cup of butter 

½ cup of currents

1 egg

¼ cup of milk


Mix dry ingredients flour, sugar, salt baking powder and baking soda together in a bowl

Cut in lard and butter into small pieces with the dry ingredients.

Add currents to the dry ingredients.

Beat egg and milk together in a small bowl.

Make a well in the centre of the dry ingredients and pour the milk egg mixture in.

Mix the batter until all the dry ingredients are moist.

Roll the batter in small pieces on cutting board, spread some flour on the cutting board to keep batter from sticking to cutting board. Constantly move the batter to help it from sticking.

Cook in frying pan on medium heat, turn when they become golden brown.
